Waffle Breakfast Sandwich with Peppered Maple Bacon

Fun and delicious breakfast sandwich twist! Fluffy waffles with peppered maple butter, eggs, cheddar cheese, and peppered maple bacon! Easy to make and can be frozen for meal prep!

Ingredients
  

Peppered Maple Bacon

  • 8 slices bacon
  • 1 tablespoon maple syrup
  • 1 tablespoon brown sugar
  • ½ teaspoon black pepper

Waffles

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 2 tablespoons sugar
  • ½ cup vegetable oil
  • 1 ¾ cups milk
  • 2 eggs

Peppered Maple Butter

  • 4 tablespoons salted butter, room temperature
  • 2 tablespoons maple syrup
  • ½ teaspoon black pepper

Eggs & cheese

  • Eggs
  • 4 slices cheddar cheese

Instructions
 

Peppered Maple Bacon

  • Prehat oven to 400 degrees F. Line a baking sheet with tinfoil, enough to fold it up the sides.
  • Lay your bacon in a single layer on the prepared baking sheet. Drizzle bacon slices with the maple syrup and sprinkle with the brown sugar and pepper. Bake for 18-20 minutes, or until crispy. Once done, set aside. Do NOT set the bacon on paper towels, as it will stick because of the syrup and sugar. While the bacon cooks, make the remaining ingredients.

Waffles

  • In a large bowl, whisk together the flour, baking powder, salt and sugar. In a medium bowl, whisk together the oil, milk and eggs. Pour the wet ingredients into the dry ingredients and whisk until just combined, lumps are OK.
  • Cook per your waflle iron instructions. For reference, I have a square waffle iron that makes 4 waffles at a time, and I used a little less than ½ cup of batter per waffle.

Peppered Maple Butter

  • In a small bowl, mix together the butter, maple syrup and pepper.

Eggs & cheese

  • Cook eggs to your personal liking then top with cheddar cheese.

Assemble

  • Spread waffles with the peppered maple butter. Make a sandwich with the bacon slices and eggs with cheese. If desired, drizzle with more maple syrup. Enjoy!
