Ingredients

Salad

  • 1 head iceberg lettuce, chopped into small pieces
  • 1 head broccoli, cut into bite-size pieces
  • ½ head cauliflower, cut into bite-size pieces
  • 1 cup grapes, halved or quartered
  • 1 lb bacon, cooked and crumbled
  • ¼ cup toasted sliced or slivered almonds

Dressing:

  • ¾ cup mayonnaise
  • 1 ½ tablespoons apple cider vinegar
  • 3 tablespoons sugar
  • ½ cup shredded parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  • Add all of the salad ingredients to a large bowl. If desired, set aside crumbled bacon and almonds for garnishing.
  • In a small bowl, whisk together all of the dressing ingredients.
  • When you're ready to serve, mix the dressing into the salad. If desired, garnish with more crumbed bacon and toasted almonds.

Notes

If you want to prepare the salad the night before, place the lettuce, broccoli, and cauliflower into a large bowl, cover, and store in the refrigerator. In a separate small bowl, stir together the dressing and store covered in refrigerator. Once ready to serve, mix in the slivered almonds, grapes and dressing.
My favorite way to cook bacon: Line a baking sheet with tinfoil large enough to come up the sides of the baking sheet. Then lay the bacon on the prepared baking sheet and bake for about 15 minutes, or until crispy, flipping over after about 10 minutes. Once bacon is cooked, place bacon onto a paper towel lined plate, and simply throw away the tinfoil.
