Homemade Biscuits and Country Sausage Gravy

Yield 5-6 people (about 10 biscuits)

Easy homemade drop biscuits topped with rich sausage gravy made from scratch with ground pork, the perfect mix of seasonings, heavy cream, and cheddar cheese. The best you'll ever have!

Sausage gravy:

  1. Preheat oven to 450° F.
  2. Line a large sheet pan with parchment paper and set aside.
  3. In a large bowl, whisk together flour, baking powder, baking soda, sugar, and salt. Make a well in the center.
  4. In a small bowl, whisk together butter and buttermilk until mixture appears lumpy.
  5. Add wet ingredients to dry ingredients and mix with a sturdy spoon until just combined.
  6. Spray a ¼ cup round measuring cup with cooking spray and scoop a scant ¼ cup at a time and drop onto prepared baking sheet. Continue with remaining dough, spacing them 1-2 inches apart.
  7. Bake 15-17 minutes until tops are golden brown.

Sausage Gravy:

  1. Add ground pork to large skillet and season with ginger, sage, salt, and pepper. Cook over medium-high heat until browned and no longer pink, about 5-7 minutes.

  2. Reduce heat to medium. Melt butter in skillet with pork then mix in flour. Cook an additional minute, stirring occasionally. Whisk in milk until combined and cook until thickened, about 1-2 minutes.

  3. Reduce heat to low and whisk in heavy cream; simmer for 5 minutes until thickend. Do not boil.

  4. Remove from heat and whisk in cheddar cheese.

  5. Serve over warm biscuits!

*Use a spoon to scoop the flour into your measuring cup and then level it off. Because when you scoop your measuring cup directly into the flour it packs it in the measuring cup and you will end up with more flour than you need.
