This recipe combines two of my favorite things: pasta and cheese! And, well, Tex-Mex. I love Tex-Mex. What I especially love about this recipe is the sauce. It’s made with enchilada sauce and cream cheese making it oh so satisfying. The ultimate comfort food, which you’ll find a lot of on my website. But, back to this Cheesy Tex-Mex Chicken Stuffed Shells. The chicken filling combines traditional spices you would often use in making tacos with chicken, beans, peppers, and onions. Party’s all here! Then pack that filling into jumbo pasta shells and you’re good to go! Everyone will love them.

After I shot photos of the recipe, I sent some home with Matt and his girlfriend, Rachel. The next day, she texted me needing to know when the recipe was going to be up on my site. I’m sorry it’s taken me so long, Rach. But, she’ll forgive me because we both have the same cool name. That’s how life works, right?!

Cheesy Tex-Mex Chicken Stuffed Shells

Jumbo pasta shells packed with tex-mex style chicken and beans, and all smothered in a creamy, southwest cheese sauce.

Ingredients

  • 21 jumbo pasta shells (a few extra in case some break)

Sauce:

  • 1 (19 ounce) can enchilada sauce
  • 1 (4.5 ounce) can chopped green chiles
  • 8 ounces cream cheese, softened
  • 8 ounces medium salsa

Chicken filling:

  • 1 ½ cups cooked and shredded chicken (about .75 lbs)
  • 1 (15 ounce) can black beans
  • 2 cups Mexican shredded cheese (plus ½ cup for sprinkling)
  • 1 bell pepper, finely diced
  • ½ yellow onion, finely diced
  • 1 (4.5 ounce) can chopped green chiles
  • ½ tablespoon chili powder
  • ¼ teaspoon garlic
  • ½ teaspoon paprika
  • 1 teaspoon cumin

Instructions

  1. Boil pasta according to package directions. While pasta is cooking, make the sauce and filling. Once pasta is done, strain and rinse with cool water. Set each shell out individually on a paper towel so they don’t stick together.
  2. Add all sauce ingredients to a medium saucepan and heat over medium. Cook sauce, whisking occasionally, for 5-10 until the cream cheese is melted evenly into the rest of the sauce and no longer lumpy.
  3. In a small skillet, sauté pepper and onion with oil over medium-high heat about 10 minutes.
  4. Preheat oven to 350° F.
  5. To make the filling, place all filling ingredients, including sautéed pepper and onion, into a large mixing bowl and stir together.
  6. Once sauce is done, pour half into a 9”x13” baking dish.
  7. Fill each shell with chicken filling and place into the baking dish. Pour remaining sauce over the shells. Cover with tinfoil and bake for 30 minutes. Remove foil and cover with remaining ½ cup of Mexican shredded cheese. Bake 10-15 minutes longer until sauce is bubbling.
  8. Serve warm with your favorite toppings! I used cilantro, cotija cheese and Mexican crema.
